Pina Colada Granola
4 cups oats
1/2 cup oat bran
1/2 cup unsweetened coconut flakes
1/3 cup chopped nuts (cashews & almonds are good)
1/4 cup coconut milk
2 tbs. coconut oil
2 tbs. veg oil (or all coconut oil)
1/4 c. agave syrup
1/4 c. honey (or sub all agave, or brown rice syrup, or some brown sugar)
1/2 tsp. vanilla extract
1/4 c. dried cranberries
1/4 c. pineapple chunks (unsweetened cut into bits)
1. Preheat oven to 350. In large bowl stir oats, bran, coconut and nuts.
Pour into a large baking sheet and spread evenly. Bake 10 minutes until lightly toasted.
2. While oats toast, combine coconut milk, oils, and sugars in saucepan. Cook over med heat and stir until boiling.
Boil for 2 minutes. Remove from heat. Stir in vanilla.
3. Pour syrup over granola in bowl and stir until dry ingredients are evenly coated. Add pineapple chunks. Divide between 2 baking sheets and spread evenly.
4. Bake for 40 minutes, stirring every 15 to 20, until fragrant and toasted. Cool on brown paper bags laid on kitchen counter. Mix in cranberries.
Store in airtight container at room temp for up to 3months, but it won't last in your cupboard that long!
