Light Grilled Shrimp and Grapefruit Salad Recipe

This recipe was inspired by the hot weather and need to BBQ something! It's a very light dinner recipe, which is perfect when you have late dinners. (Serves 2) Ingredients:
  • 2 Large Grapefruits
  • 16 medium shelled shrimp
  • 2 Tbsp of fresh lime juice
  • 1/4 cup extra virgin olive oil
  • Dash of Cayenne Pepper
  • 1/2 teaspoon sea salt
  • Dash crushed red pepper
  • 1 head of butter lettuce
  • A handful of arugula
  • 2 avocados cubed
Marinade the shrimp in EVOO, with a dash of cayenne pepper and red pepper. Salt and pepper the shrimp, and 1 Tbsp of lime juice. Skewer the shrimp and BBQ for one minute on each side. Cut the peel from the Grapefruit with a knife, and dice it. Save some of the juice from the grapefruit for the dressing and squeeze any extra juice from the remaining peel. (~3 Tbsp) Whisk the EVOO, remaining lime juice, a pinch of salt and pepper, and grapefruit juice together. Throw everything into the salad, and drizzle the grapefruit vinaigrette onto the salad.
